Encrypt sensitive backup payload with AES-GCM

Passwords are never stored. Losing the password makes the encrypted archive unrecoverable.

Backups include a manifest, database records, EV-named images and integrity checks. Encrypted backups wrap the complete sensitive payload inside AES-256-GCM. Restore validates everything before replacing the Binder database.
