Plan a meal to a brief | Process record

1. Plan one fictional lunch set

Choose or draw the stated components and label the ingredient groups.

Wrap: 1 tortilla, 40 g chickpeas, 30 g cucumber, 15 g soft cheese.

Sides: 1 apple and 1 plain yoghurt pot.

Name two food groups represented.

2. Check the budget

Use illustrative prices: wrap 70p, apple 30p, yoghurt 25p.

Total cost = ___ p or £___.

Limit = £1.50. Money remaining = ___ p.

If an approved alternative yoghurt costs 40p, new total = ___ p.

3. Evaluate the plan

Mark met, not yet or need evidence. Then name a next action.

Kai’s fictional plan has a wrap, apple and yoghurt. Cost calculation: £1.25.

The written order says label/hygiene check, prepare wrap, serve or cover/chill.

The actual yoghurt label is missing. Can making begin?

Exit check

Does staying within budget prove that a food plan is safe?

Recipe | Chickpea and cucumber wrap

Makes 1 practice snack wrap. No cooker or blender. Prepare within the supervised lesson. Check the school’s ingredient, allergy and swallowing plans first.

Ingredients for 1 wrap: 1 small ready-to-eat tortilla (about 40 g); 40 g drained ready-to-eat canned chickpeas; 30 g cucumber; 15 g plain soft cheese. Adult confirms the chickpea and tortilla labels allow eating without cooking.

Equipment: bowl, fork, spreading knife with rounded end, stable board, scales, plate and spoon. Adult opens the can, drains and rinses the chickpeas, and removes the sharp can/lid. Cucumber can be washed and diced by the adult before the lesson.

Allergen check: tortilla commonly contains WHEAT; soft cheese contains MILK. Chickpeas are also an allergen for some people. Check each full actual label and any may-contain warning. An adult must approve all substitutions and avoid cross-contact.

1. Complete the kitchen routine. Ask the adult to confirm that all ingredients and utensils match the agreed plan.

2. Put the bowl on the scales and zero them. Measure 40 g drained chickpeas. Mash with the fork until no whole chickpeas remain.

3. Zero the scales. Add 15 g soft cheese and mix. Keep unused cheese chilled and use a clean spoon.

4. Wash the cucumber with water. An adult dices it, or use the agreed supervised cutting method on a stable board. Weigh 30 g small pieces.

5. Place 1 tortilla on a clean plate. Spread the chickpea mixture across the middle, leaving a clear edge. Add the cucumber.

6. Fold the bottom edge up, fold both sides towards the middle, then roll. Check the filling stays inside when it sits on the plate.

7. Record the completed steps and one measure. Serve promptly or cover, label and chill at 0–5°C under the school plan. Reset the workbench.

Paper option: sequence the seven method cards and make a paper fold using a clean scrap sheet. Use labelled ingredient tokens for measuring maths. Do not pretend paper practice proves a food-handling skill.

Alternative: use adult-approved suitable bread/soft-cheese alternatives or serve as separate components. Recheck the actual labels and brief; no suggested substitution is guaranteed suitable for every person.

Cost cards | Illustrative classroom data

These are invented teaching prices, not shop prices or a promise that a snack will cost this today. Calculate only the ingredients used. Water, labour, equipment, energy and packaging are excluded.

Tortillas: 6 cost £1.50. Use 1 tortilla for one wrap.

Ready-to-eat chickpeas: 240 g drained contents cost £1.20. Use 40 g per wrap.

Cucumber: 300 g usable amount costs £1.00. Use 30 g per wrap.

Soft cheese: 200 g costs £2.00. Use 15 g per wrap.

Optional apple: one costs 30p. Optional plain yoghurt pot: one costs 25p. These are separate menu items, not extra wrap ingredients.

Worked method: 240 g chickpeas makes six 40 g portions. 120p ÷ 6 = 20p for the chickpeas in one wrap.

Compare the ingredient-used cost with buying all four packs. Explain why those are different numbers.
